Instructions
Step 1
Preheat oven to 350F, grease and line a 9x13 baking pan.
Step 2
Whisk together 2 1/2 cups of flour with the powdered sugar and salt. Add in the melted butter and vanilla slowly and mix until combined.
Step 3
Press down the dough into a flat layer, prick with a fork, and bake at 350F for about 20 minutes or until a light golden.
Step 4
While the crust is baking whisk together the sugar and zest until the mixture is a light shade of yellow. This can also be done in a food processor.
Step 5
Add the lemon sugar and remaining half cup of flour to a large bowl and whisk together. Pour in the lemon juice and eggs and whisk until completely combined.
Step 6
Pour the filling onto the warm crust then for about 25 minutes, turning halfway through the bake. Edges should be set and center should be slightly jiggly when done. Remove from oven and cool at room temp for an hour then transfer to the refrigerator for two hours.
Step 7
Dust with powdered sugar and cut into bars with a clean, sharp, damp knife. Clean and re-dampen the knife after each cut. Enjoy!
