Herb Butter
Instructions
Step 1
Thaw turkey 1 day for every 5 lbs in fridge.
Step 2
Remove turkey from fridge at least 1 hour before roasting and allow to come to room temp.
Step 3
Adjust oven rack so turkey will sit in the center of the oven. Preheat to 325 degrees
Step 4
Combine room temp butter, garlic, salt, pepper, herbs for the herb butter thoroughly and set aside
Step 5
Remove turkey from any packaging, remove neck and giblets.
Step 6
Pat try with paper towel and inspect for remnants of feather and such in skin. Remove any necessary.
Step 7
Use herb butter around cavity, then season with salt and pepper
Step 8
Stuff with onion, apple, rosemary, sage, thyme, and lemon.
Step 9
Loosen and lift skin, add herb butter underneath. Cover everywhere from breast to legs.
Step 10
Tuck wings and secure legs. Position in roasting pan.
Step 11
Microwave remaining herb butter until very soft (almost melted), baste onto outside of turkey
Step 12
Roast 325 degrees for about 15 minutes per pound, or until internal temp reaches 165-170 degrees.
Step 13
Last hour of roasting, remove lid to brown the skin
Step 14
MUST rest the turkey 20-30 minutes before carving.
