Truffle Mac 'n' Cheese Cauliflower Bake

Instructions

Step 1
Preheat oven to 200°C, 390°F Gas Mark 6
Step 2
Lightly grease a 2L Baking Dish
Step 3
Bring large pan of water to rolling boil. If using dried pasta add now followed by Cauliflower after 2 mins. Cook for 3 mins. If using fresh pasta, add Cauliflower then Pasta after 3 mins and cook for 1 minute. Adjust to suit pasta chosen but do not overcook the cauliflower!
Step 4
Meanwhile, heat the butter in a pan until foaming and add the flour. Cook for 2-3 minutes stirring regularly. Add the milk gradually ensuring well incorporated.
Step 5
Drain the pasta and cauliflower into a large bowl, reserving 250 ml of the cooking water. Spread the cauliflower and pasta about the greased dish
Step 6
Slowly add the cooking water to the sauce until have a smooth sauce. Stir in the mustard and simmer for 1 min
Step 7
Remove from heat and stir in the cheese and the pesto. Pour over the cauliflower and pasta stirring until evenly coated. Sprinkle the parmesan over the top
Step 8
Bake for 20 mins until golden and bubbling. Stand for 5 mins and serve
