Step 1
Remove hard egg yolks once cool and blend with butter. Slowly add flour, sugars, ground almond, cinnamon. Add rum or port. Bring pastry into a ball and place in fridge for 30 mins.
Step 2
Roll out (it will be crumbly so you may have to use fingers to push it into baking tray. Keep extra bits for lattice. Spread jam over base, lay lattice on top. Gas mark 5 20-25 minutes, until just starting to brown. Serve cold.
