For The Chocolate Ganache

For The Coconut Pecan Layer
Step 1
In a medium saucepan over medium heat, add butter, sugar, egg yolks, vanilla, and salt.

Stir constantly over medium heat until mixture thickens. About 12-15minutes.

Remove from heat and stir in coconut and pecans.

Allow the mixture to cool slightly and chill in the fridge for 1hr while you make the rest of the pie.

For The Oreo Pretzel Crust

Preheat the oven to 350 degrees. Grease a shallow 9-10” pie dish with butter and set aside.

In a large bowl add crushed oreos, pretzels, and sugar. Stir with a spatula to coat.

Add in melted butter and mix until the mixture feels like wet sand. You may need to add a little more butter depending on the consistency of your pretzels.

Pour the crust mixture into the prepared pie dish.

Work the crust up the sides of the dish first using your fingers to pat the mixture together.

Press the crust into the bottom to fill in the rest of the pan.

Bake for 8 minutes.

Remove the pie crust from the oven and set aside. Leave the oven preheated to 350 degrees.
For The Brownie Filling

In a large bowl add melted butter, oil, sugars, egg + yolks, and vanilla. Whisk to combine.

Sift in flour, cocoa powder, and salt.

Gently stir the mixture until just combined.

Pour the brownie mix into the prepared oreo/pretzel crust.

Bake in a 350 degree preheated oven for 20 minutes until the brownie is firm on the edges and there is no jiggle in the middle.

In a separate microwave safe bowl, heat whipping cream for 30 seconds until warm.

To Assemble The Pie

Pour ganache on top of the brownie filling while still warm. Using a spatula to spread the ganache to the crust.

Chill the pie in the fridge for an hour.
