Homemade Pita!
1 T instant yeast
1 T sugar
1 1/2 cups warm water
4 cups all purpose flour
1 1/2 tsp kosher salt
2 T oil
Combine ingredients until a cohesive dough forms. Let it ride for an hour in a covered well piled bowl.
On a floured surface, divide the dough into 8 pieces (100 grams each) and pinch ends into the center, making the shape of a small pita.
Let it rest for 10 minutes and roll each piece with a rolling pin lightly, stretching into a 4-5 inch round pita shape. While the pita is resting, preheat oven to 500 and place a metal baking sheet into the oven, inverted side up.
Place the pita (a couple at a time) onto the hot baking sheet and bake for 5 minutes, flipping the pita over halfway into the baking time.
Place baked pitas in a towel and cover to allow the bread to keep steaming as it sits.
