2 teaspoonsactive dry yeast
1 ½ tablespoonsbrown sugar
1 ¼ cupswater
warm, you may need a little more depending on how the dough comes together
3 ½ cupsbread flour
1 ½ teaspoonssalt
2 Tbspbaking soda
1 Tbspmaple syrup

whatever kind you like, for bowl
1egg white
for egg wash, use a whole egg if you like a darker bagel

Instructions
Step 1
Add ½ cup of warm water, brown sugar and yeast to a mixing bowl. Let it sit for five minutes, and then stir
Step 2
Combine the flour and salt in a separate bowl. Then pour the flour mixture into the yeast mixture

Pour 1/3 cup of warm water into the bowl as well. Mix and stir the dough and add the remaining warm water as needed. You want a moist yet firm dough after you have mixed it.
Step 4
On a floured work surface, knead the dough for about 7 minutes until it is smooth and elastic (or use a standing mixer if you have one). Try working in as much flour as possible to form a firm and stiff dough.

Brush a large bowl with a thin layer of oil, then add your dough ball. Lightly brush the top of the dough with some more oil.

Cover the bowl with a damp dish towel. Let rise in a warm place for 1 hour or until the dough has doubled in size. Punch the dough down, and let it rest for another 10 minutes.

Carefully divide the dough into 8 equal pieces, like a pizza.

Shape each piece into round rough dough balls.

Then use your thumb to poke a hole through the center. Place your bagels on a cookie sheet and cover with a damp kitchen towel for 10 more minutes.

Meanwhile, preheat your oven to 425ºF and bring a large pot of water to a boil.
Step 11
Once the water is boiling, add the baking soda and maple syrup. Carefully lower the bagels into the water and boil on each side for 30 seconds.
Step 12
Once all the bagels have boiled, brush them with egg wash and dip each bagel in your topping of choice or leave them plain.
Step 13
Place the bagels on a baking sheet with a light dusting of flour or corn meal.
Step 14
Bake for 15-20 minutes, until golden brown.
