Instructions
Step 1
In a small bowl, whisk together the low-sodium soy sauce, rice vinegar, sesame oil, cornstarch, brown sugar, garlic, ginger, sesame seeds, and chicken stock. Set aside.
Step 2
In a small bowl, whisk egg with cornstarch, salt, and pepper. Add chicken pieces to the batter and toss to fully coat.
Step 3
In a large skillet, heat 1 tbsp of olive oil. Place chicken, piece by piece, and cook until batter is slightly browned and chicken is cooked. Cook in two batches if needed.
Step 4
Pour sauce mixture over the chicken and simmer on medium-low heat until the sauce has thickened. Remove from heat. Serve over jasmine rice.
