Pesto Tortellini

This is an incredibly simple pasta salad that I eat literally all the time. I'm sure other people have their versions, and it's pretty easy to make variations if you want to try out different stuffed pasta!

Instructions

Step 1
Boil the Tortellini according to package directions
Step 2
While the pasta is boiling, shred the Parmesan, chop the cucumber and put it in your bowl along with a handful of pistachios and a handful of tomatoes
Step 3
When pasta is done, drain it and spoon it in to your bowl; add pesto and stir
