Zucchini Fritters

📕Recipe here:
❂ Ingredients:
2 lb Zucchini
1/4 cup Dill
1/2 cup Scallions
3/4 cup All-purpose flour
1/4 cup grated Parmesan cheese
2 large Eggs
2 cloves garlic, minced
kosher salt and ground black pepper to taste
Olive oil
❂ Cooking process:
⁃ Wash and grate zucchini.
⁃ Salt a little and squeeze the juice well after 10 minute
⁃ Put on zucchini dill, scallions, eggs, Parmesan cheese, garlic, and flour together in a large bowl. Season with kosher salt and pepper. Mix well.
⁃ Heat olive oil in a large skillet over medium-high heat.
⁃ Working in batches, scoop tablespoonfuls of zucchini mixture into the hot skillet and fry until golden brown, about 3-4 minutes per side.
⁃ Serve with sour cream and enjoy!
