Step 1
Preheat your oven to 375°F (190°C).
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into a 9-inch pie pan, and bake for 7 minutes. Allow to cool completely on a wire rack.
Lower the oven temperature to 325°F (165°C).
In a large bowl, combine the egg yolks, key lime juice, and sweetened condensed milk. Whisk together until well combined.

Pour the key lime mixture into the cooled graham cracker crust. Bake in the oven for 15-18 minutes or until the filling is set.
Allow the pie to cool completely before refrigerating. Chill for at least 2 hours, or preferably overnight.
In a mixing bowl, whip the heavy cream until soft peaks form. Add the powdered sugar and continue whipping until stiff peaks form.
Spread the whipped cream over the cooled key lime pie. Sprinkle the lime zest over the whipped cream as a garnish just before serving.
