2 cupswhole milk
For the Dough
½ cupgranulated sugar
½ cupunsalted butter
1 ½ tablespoonsactive dry yeast
5 cupsall-purpose flour
1 teaspoonbaking powder
½ teaspoonbaking soda
½ teaspoonsalt
1 cuplight brown sugar
For the Filling, packed
2 tablespoonsground cinnamon
½ cupunsalted butter
melted
8 ouncescream cheese
For the Frosting
½ cupunsalted butter
softened
4 cupspowdered sugar
2 teaspoonsvanilla extract
Instructions
Step 1
Heat the milk, sugar, and butter in a small saucepan over medium heat until the butter is melted. Set aside to cool until just warm to touch (about 110°F).
Step 2
Sprinkle yeast over the warm milk mixture, stir gently, and let sit for 10 minutes until frothy.
Step 3
In a large bowl, add the yeast mixture and gradually stir in 4 cups of flour. Cover with a clean kitchen towel and let rise in a warm place for 1 hour.

After an hour, add the remaining 1 cup flour, baking powder, baking soda, and salt. Knead until the dough comes together (it should be soft and slightly sticky).

On a floured surface, roll the dough into a large rectangle (about 12x24 inches).

Mix the brown sugar and cinnamon together in a bowl. Spread the melted butter over the dough, then sprinkle the sugar-cinnamon mixture evenly on top.

Roll the dough tightly from the long side, creating a log. Cut into 12 equal slices and arrange them in a greased 9x13 inch baking dish.

Cover the dish with the kitchen towel and let rise in a warm place for another 30 minutes.

Preheat the oven to 375°F (190°C) while the rolls are rising.

Bake for 25-30 minutes or until the rolls are golden brown.

While the rolls are baking, make the frosting. Beat together the cream cheese and butter until creamy. Gradually beat in the powdered sugar, then add the vanilla extract.

Remove the rolls from the oven and let cool for about 5 minutes. Spread the frosting on top while the rolls are still warm.
