1. Dice the red onion and pickles, set aside
2. Rinse and drain the chickpeas, add to a bowl, and mash them with a fork (ok with some lumps)
3. Now add rest of the no-tuna mix ingredients, including the red onion and pickles, to the same bowl and stir to combine into a creamy mixture
4. Assemble your sandwich by adding lettuce, cucumber, the filling and then another slice of bread to make it into a sandwich! Or have the no-tuna mix as a topping on two separate slices of bread
