Everyone needs a few fun twists on the classics to keep them interesting. This is my fresh take on the classic chickpea salad sandwich: The Buffalo Chickpea Salad Wrap. It’s spicy, it’s tangy, and it’s bursting with crisp and crunchy veggies. It’s basically a party in your mouth! Oh yeah, did I mention that it’s super easy to make? This is about to be your new favourite lunch.

drained and rinsed

3 Tbspvegan mayonnaise

3 Tbspbuffalo sauce
vegan-friendly

3celery ribs
diced

2carrots
shredded

4green onions
diced

¼ cupcilantro
chopped, optional

½ cupsunflower seeds

salt
to taste

to taste

Tortillas
Gluten-free, if required

Lettuce
or spinach

Mashed, guacamole, or vegan ranch dressing
Instructions
Step 1
In a large bowl, lightly mash chickpeas with a potato masher or fork. There should be some whole chickpeas left for texture.
Step 2
Add mayonnaise, buffalo sauce, celery, carrot, green onion, cilantro, sunflower seeds, and salt and pepper. Stir to combine. If the mixture is dry, add more mayonnaise, as needed.
Step 3
Serve on a warmed tortilla (gluten-free, if required) with toppings of choice. Save in the fridge for up to 5 days.
