Ingredients
12 servings

2 cupsstrawberries

¼ cupavocado oil

2 cupsalmond flour

5 ozmonk fruit

5 ozpotato starch

4 tablespoonsarrowroot

½ tspsalt

2 teaspoonsbaking powder

1 tspvanilla extract
Glaze
Instructions
Step 1
Put strawberries into a high speed blender and blend until smooth.
Step 2
In a bowl, place almond flour, potato starch, arrowroot, monk fruit, salt, and baking powder, stir to blend. Add the 1 1/2 cup strawberry purée, avocado oil, and vanilla extract. Mix well by hand until thick paste forms.
Step 3
Add the strawberry batter to a large pastry bag fitted with wide tip (a ziploc bag with corner snipped works too:) I find it easier to pipe the batter into the donut pan, using a bag.
Step 4
Heat oven to 350 degrees F.
Step 5
Bake donuts for 22-25 minutes or until the edges look dry and the tops are slightly cracked. Optional, Once cooled dip into glaze and decorate with sprinkles.
