Instructions
Step 1
Rinse your brown rice thoroughly and then cook as per instructions. Place to the side to cool
Step 2
Finely dice the garlic, herbs, cucumber, tomato, lettuce and shallots.
Step 3
Add the rice wine vinegar and a pinch of salt and sugar. Add the shallot, herbs, chilli flakes, oregano and 1 tbsp of oil.
Step 4
Add the diced chicken to a bowl with paprika, cumin, half the garlic, salt & pepper. Stir until well coated.
Step 5
Heat a medium pan with a drizzle of oil, once hot add the chicken. Cook until cooked through.
Step 6
Once the rice is cooled, add to your herb and shallott mixture along with the tomato, cucumber, lettuce
Step 7
Add the remaining garlic and herbs to the yoghurt and stir until combined
Step 8
Serve the rice with chicken on top and a drizzle of your yoghurt.
