300mlcurry base
watered down

2hot chillies

1 tspcayenne chilli powder

¼ tspturmeric powder

1 tspcoriander powder

1 tspcumin powder

1 Tbsptomato puree
watered down

½ tsptamarind concentrate

Chicken Tikka
Pre-Cooked

1 Tbsplemon juice

2 tsphoney

½ tspsalt

1 tspbutter ghee

Instructions
Step 1
Heat pan on medium and when hot add 1 or 2 tbsp oil
Step 2
Add onion and gently fry with bay leaf for around 5 mins
Step 3
Add garlic and ginger paste, stir through and then add diced tomato
Step 4
Add small amount of base gravy
Step 5
Add chillies, spices, a touch more base gravy and stir through
Step 6
Add tomato puree, stir through
Step 7
Add approx 150ml base gravy, allow to caramelise before stirring
Step 8
Add tamarind concentrate, stir through and then add pre cooked chicken
Step 9
Add approx 150ml base gravy, lemon juice and honey, stir through
Step 10
Add salt, stir. Cook for 5-7 mins stirring occasionally
Step 11
Just before finishing cooking, add 1 tsp butter ghee and stir through
Step 12
Add most of coriander and stir
Step 13
Serve up and garnish with spring onions, coriander and ginger
