Instructions

Step 1
Place two small plates in the freezer for testing the consistency of the marmalade after it’s boiled.
Step 2
Half, quarter, and eighth the oranges. Pull out any pips and place them in a cloth bag. Add enough water to just cover the fruit and then an extra inch of water more.
Step 3
Simmer the oranges with the cloth bag of pips for one hour. (The pips release pectin.)
Step 4
After one hour, remove the pip pouch and pour the softened fruit and liquid into a food processor. Process until its to the consistency of choosing.
Step 5
Pour back into the pan and add the sugar. Boil for 15 minutes. After 15 minutes, put a small spoonful on the chilled plate and after one minute, if it wrinkles, it will set up. If it doesn’t wrinkle, boil for 5 minutes longer.

Step 6
If you can’t find Seville oranges, substitute with two oranges, one lemon, and one grapefruit.
