Ingredients

1 poundItalian Turkey Sausage
8 ouncesFrozen Tortellini
1sweet onion
medium
4 clovesgarlic
minced
2carrots
finely chopped
2 ribscelery
chopped
1zucchini
chopped
2roma tomato
chopped
8 ouncesspinach
chopped
4 cupschicken stock
1 cupheavy cream
fresh basil
fresh parsley
salt
to taste
pepper
to taste
2 tablespoonspesto
1 stickbutter
Instructions
Step 1
1. Finely dice garlic and onions and set aside in a small bowl.
Step 2
Chop all vegetables except for the tomatoes and spinach. Set aside in a large bowl
Step 3
Cook Turkey sausage in a Dutch oven. Once Turkey sausage is browned, add a stick of butter, the onion and garlic. Cook until softened.
Step 4
Add all vegetables except for the tomatoes and spinach. Cook for 5 minutes.
Step 5
Add the chicken broth. Simmer slowly for 30 minutes until vegetables are tender.
Step 6
In a separate pot, boil water and cook tortellinis for 4-5 minutes, or until al dente.
Step 7
Once the vegetables are cooked, add the tomatoes, spinach, basil, parsley, pesto and heavy cream. Cook an additional 2-3 minutes.
Step 8
Pour the tortellinis in the soup just before serving.
