Ingredients

500gpork tenderloin
cut into thin strips

1eggplant
large, cut into 1-inch cubes

1cauliflower
medium, cut into florets

3 tablespoonsvegetable oil
divided

2cloves garlic
minced

1 inchfresh ginger
grated

1onion
medium, sliced

3 tablespoonssoy sauce

2 tablespoonsoyster sauce

1 tablespooncornstarch

½ cupwater

salt
to taste

pepper
to taste

Instructions
Step 1
Marinate the pork with 1 tablespoon of soy sauce, salt, and pepper. Set aside for at least 15 minutes.
Step 2
Attach the stirring paddle to the Kenwood kCook bowl. Add 1 tablespoon of oil and preheat using the fry program.
Step 3
Add the pork into the bowl. Use the fry program again for 10 minutes, or until the pork is fully cooked. Then, remove the pork and set it aside.
Step 4
Add another tablespoon of oil to the kCook bowl, followed by the eggplant cubes. Use the fry program for around 5-7 minutes, or until the eggplant has softened. Remove and set it aside.
Step 5
Pour the last tablespoon of oil into the bowl, add the garlic, ginger, and onion. Use the fry program for a couple of minutes until the onions are translucent.
Step 6
Add the cauliflower florets to the bowl. Choose the steam program and set the timer for 5-7 minutes, or until the cauliflower is tender. If needed, add a small amount of water.
Step 7
While the cauliflower is steaming, combine the remaining soy sauce, oyster sauce, cornstarch, and 1/2 cup of water in a bowl to make a sauce.
Step 8
Once the cauliflower is ready, return the pork and eggplant to the kCook bowl, and pour in the sauce you prepared. Choose the stew program and set the timer for around 3 minutes, or until the sauce has thickened.
Step 9
Season with additional salt and pepper if necessary.
Step 10
Garnish with the chopped spring onions before serving.
