Instructions
Step 1
Preheat oven to 375 degrees.
Step 2
Melt butter in large skillet or stock pot. Add rice and stir well for 2 minutes.
Step 3
Stir in 4 cups of water and chicken boullion cubes. Stir well. Once boiling, turn heat to Med-Low and cover. Cook 10-15 minutes as directed by package directions. Remove from heat, fluff and keep covered while oven preheats. Fluff again right before casserole assembly.
Step 4
While rice is cooking, brown ground beef. When done, add garlic and cook until fragrant.
Step 5
Stir in taco seasoning, tomatoes, corn and green chiles. Turn heat to low and let simmer until heated through and most of the liquid is evaporated. Add onion powder and garlic powder to taste.
Step 6
In oven safe dish, add half the rice to cover bottom evenly. Top with half the beef mixture. Drizzle with sour cream. Cover with half the cheese. Repeat rice/beef/sour cream/cheese layers.
Step 7
Put in oven 15-20 minutes until cheese is melted and heated through. Remove from oven and serve as is or with tortillas or chips.
