The more you make karak, the more you know your preference and the best mix of measurements.
When you use more water and less milk, the “spices” should be less and vice versa.
Color is usually a good indicator of how ready karak is.
The tea needs to “cooked” with the milk or else it’ll just be like شاي حليب.
Make sure your carafe is warm before you pour the karak. What I usually do is fill it up with boiled water till the karak is ready.

Instructions
Step 1
1. Add 7 tea spoons of tea into a glass/stainless steel pitcher. What I always use and prefer is شاي الكبوس المطحون. Powdered tea works better for karak.

2. Add around 1 heaping teaspoon of powdered cardamon (هيل مطحون). You could adjust that once you know your preference.
Step 3
3. Add some cinnamon (not too much though). You could also add some مسمار وزنجبيل but I don’t usually add them

4. Add sugar as desired -three tablespoons is a good place to start
Step 5
5. Add some saffron. There’s no exact measurement, but around 1/2-3/4 teaspoon. Make sure to crush it before adding it to maximize flavor.

6. Pour 4/4.5 cups of milk (“fresh” like Mara3i, etc.) into the pitcher (you can microwave it before adding it if you’d like)

7. Boil and pour around 3/3.5 cups of water and pour into the pitcher

8. Keep it on low heat for 20-25ish minutes for the tea to steep well (the longer the better, I sometimes leave it for 40 minutes) and stir every once in a while

9. Stay near the oven and stir on medium heat for 5/6minutes, then turn up the oven to high heat till it starts boiling
Step 10
10. When you see foam forming on the top of your pitcher, it means the milk will start to overflow -something you need to be careful of. Right before it starts to rise, remove the pitcher from the heat. You should keep your eye on it the whole time it’s on high heat.

11. Strain and enjoy!
