Ingredients

10 mlsextra virgin olive oil
250 gmsbeef chuck steak
diced
0.5brown onion
diced
1clove of garlic
crushed
200 gmsmushrooms
sliced
500 mlsbeef stock
20 gmstomato paste
200 gmsgreen beans
1red capsicum
diced
300 gmspotatoes
50 mlsreduced fat milk
Instructions
Step 1
Heat half the oil in a saucepan over medium-high heat. Cook beef for 5 minutes or until browned all over. Remove from heat and set aside.
Step 2
Heat remaining oil and cook onion, garlic and mushrooms for 5 minutes. Return beef to the pan with the stock and tomato paste. Bring to a boil.
Step 3
Reduce heat to medium-low and simmer, covered for 1 hour or until beef is tender, adding beans and capsicum during the last 10 minutes of cooking time.
Step 4
Meanwhile, bring another pot of water to the boil. Add potatoes and cook for 10-15 minutes or until soft and ready for mashing. Drain. Add milk and mash.
Step 5
Divide the mash into two serves and top with casserole. Keep leftovers in the fridge.
