Spinach Artichoke Dip Chicken Sandwich

Spinach Artichoke Dip Chicken Sandwich
Ingredients:
Spinach Artichoke Dip
- Mince 3 large cloves of garlic
- Thinly slice one large shallot
- Saute in olive oil with a large pinch of salt and pepper
- Add a bag of spinach
- Saute until its cooked down into the bottom of the pan
- Drain the water
- Roughly chop a can of artichoke hearts
- Add everything to a blender with a brick of cream cheese, a cup of mayo, a cup of sour cream, a couple tbs of chili flakes
- Pulse until everything is combined
- Add to a roasting dish and top with mozzarella and parmesan
- Bake at 500 until top starts to bubble and char (around 15 min)
Chicken
- Season panko with Salt Hank Chimichurri salt
- Batter chicken thighs in flour, then eggwash, then panko
- Fry in an inch of oil for around 4 minutes per side or until golden brown
Arugula Salad
- Add half of a thinly sliced red onion and a big handful of arugula to a bowl
- Add juice of half a lemon, olive oil, and apple cider vinegar
- Add a big pinch of salt and pepper
Put it all on a toasted sourdough baguette
