Instructions
Step 1
In a medium pot, cook farro according to package. Once cooked, set aside.
Step 2
Preheat oven to 425F and line baking sheet with foil.
Step 3
Toss cubed butternut squash with olive oil, salt and pepper.
Step 4
Bake for 25 minutes.
Step 5
In a bowl mix together farro, butternut squash, cranberries, balsamic vinegar and goat cheese. Serve on top of a bed of spinach
