STRAWBERRY FARRO SALAD

Fresh, local strawberries are one of our favorite fruits, especially when they're in season. Peppery arugula is combined with nutty farro, sweet strawberries, crisp veggies, crunchy almonds, creamy feta and basil to make this yummy summer salad! Drizzle with Balsamic Walnut Dressing (oil-free) to bring everything together.

Ingredients
4 servings
1 cupfarro
5 ouncesarugula
or spring mix
1 pintstrawberries
thinly sliced, green tops removed
1 cupcucumber
diced
2 ouncesvegan feta
crumbled, or regular crumbled feta
2 stalksgreen onion
thinly sliced, or thinly sliced red onion
½ cupalmonds
toasted, sliced, or toasted pine nuts
¼ cupfresh basil
firmly packed, torn into small pieces
¼ cupaged balsamic vinegar
¼ cupraw walnuts
or raw pecans
¼ cupwater
1 Tbspfresh lime juice
½ tablespoondijon mustard
½ tablespoonpure maple syrup
1clove garlic
½ tspthyme
optional
¼ tspsea salt
or to taste
freshly ground black pepper
to taste
Instructions
Step 1
Make the farro: Cook farro according to package. Once cooked, cool and set aside.
Step 2
Make the dressing: To a high speed blender, add balsamic vinegar, walnuts (or raw pecans), water, lime juice, Dijon mustard, pure maple syrup, garlic, thyme, sea salt, black pepper and blend until smooth.
Step 3
Assemble: Add greens to a large serving bowl and gently fold in the farro. Top with cucumbers, strawberries, green onions, feta, almonds and basil.
