Instructions

Step 1
First off, preheat your oven to 350°F (175°C) and get your baking sheet ready with some parchment paper or a silicone baking mat.

Now, in a big bowl, mix together the peanut butter, sugar, egg, and vanilla extract until it’s all nicely combined.

Next, you're going to add in the baking soda and salt. Stir it up until it’s all mixed in there.

Then, using a cookie scoop or a plain old tablespoon, drop the dough onto your prepared baking sheet. Don't forget to leave some room between each cookie; they'll spread out while baking.

This next step is a classic: use a fork to press a crisscross pattern onto each cookie. It also helps to flatten them a bit.

If you're up for it, sprinkle a bit of coarse sea salt on top of each cookie before baking. Trust me, it’s a game-changer!
Step 7
Pop them in the oven for about 10-12 minutes, or until the edges are starting to turn golden. Watch out though, you don’t want to over-bake these babies. We're going for soft and chewy here.

Once they’re done, let the cookies chill out on the baking sheet for about 5 minutes. Then, move them over to a wire rack to cool down completely.
