Instructions
Step 1
Slice eggplant into a little thicker than 1/4” slices. Lay out on a cutting board and sprinkle a little salt on each slice. Wait about 5 minutes and blot off the moisture with paper towels. Meanwhile, in a medium shallow dish or bowl Combine bread crumbs, parmesan cheese, salt, and garlic powder.
Add the eggs in another dish and whisk
Step 2
Add flour in a 3rd dish, season with a little salt and pepper to taste.
Step 3
Dip each eggplant slice into the flour, then into the egg and finally into the bread crumb mixture. Spray each side of the eggplant with cooking spray.
Step 4
Place in a single layer in the air fryer and cook at 380°F for 5 minutes. Flip over and cook for 4 minutes or until crispy and golden brown. Work in batches, don’t overcrowd the basket.
Step 5
Add about 1-2 tablespoons marinara sauce and mozzarella cheese to each eggplant slice and cook for another 2 minutes or until cheese is melted.
Step 6
Or you could dip the air fried eggplant slices into a side of marinara sauce
