Step 1
Preheat oven to 375°
Step 2
Using a mandolin slicer, sliced zucchini lengthwise into 1/8 inch thick slices and set aside
Step 3
In a medium-size bowl combine:ricotta, egg, spinach, 1/2 cup mozzarella, Parmesan, salt, and nutmeg
Step 4
Layer three slices of zucchini parallel to each other and so that they are slightly overlapping. It's a large spoonful of the ricotta mixture on one end of the zucchini slices and roll up the zucchini place the Zucchini next to each other on a lightly greased 9 x 9" baking dish
Step 5
Poor tomato sauce over the top of zucchini and then sprinkle with cheese
Step 6
Bake for 25 minutes
