50galmond flour
ground almonds

⅓ teaspoonbaking powder

Instructions
Step 1
Mix flour with almond flour, baking powder and rub with cold butter until crumbly. Add yolks, sugar, water, knead the dough and put it in the refrigerator for 40-60 minutes.
Step 2
Cut the rhubarb into strips. Dissolve sugar in water in a pan, add butter and cinnamon. Put the rhubarb and stew uncovered for a couple of minutes. Cool down.
Step 3
Line a baking dish with parchment, lay out rhubarb without syrup. You will need the syrup later.
Step 4
Beat egg whites with sugar and gently mix with almond flour. Put on rhubarb.
Step 5
Rub on a greater cold dough on top.
Step 6
Bake at 180C for 30 minutes.
Step 7
Cool and turn over on a plate. Pour the remaining rhubarb syrup over the top.
