Ingredients

1 Tbspolive oil
1poblano pepper
diced, remove seeds
1onion
medium, diced
3cloves garlic
minced
3 cupspotatoes
chopped, white or yellow
4 cupsvegetable broth
2 canswhite beans
drained and rinsed, great northern beans work best
1 ½ cupssweet corn
canned or frozen
4 ozgreen chiles
mild, or spicy if you prefer
3 Tbspvegan cream cheese
1 tspcumin
½ tspherbs de provence
salt
to taste
pepper
to taste
avocado
shredded cheese
sour cream
tortilla chips
cilantro
lime
Instructions
Step 1
In a large pot (dutch oven or saucepan), heat olive oil over medium heat. Add diced onion, poblano pepper, and minced garlic and cook for 6-7 minutes or until onion is translucent.
Step 2
Add in potatoes and vegetable broth and start to bring to a boil.
Step 3
Add in your white beans, green chiles, cream cheese, corn, cumin, and herbs de Provence. Once your soup is at a full boil turn down to simmer and cover for 25-30 minutes. Stir occasionally.
Step 4
Once potatoes are fully cooked, serve into bowls and sprinkle with tortilla chips or any toppings your desire. Add salt and pepper to desired taste.
