One Pot Bean Chipotle Chili

Spicy bean chili to serve with sweet potato or quinoa

Instructions

Step 1
Heat the oil in a large pot over medium heat.
Step 2
Add the onion, a few pinches of salt and pepper, and stir.
Step 3
Cook until the onion is translucent, about 5 mins, then add garlic and red pepper.
Step 4
Stir and cook until soft, about 5 to 8 minutes, turning the heat down.
Step 5
Add the tomatoes, beans, water, chipotles, adobo sauce, corn, salt and pepper.
Step 6
Cover and reduce the heat to low.
Step 7
Simmer for 25 minutes, stirring occasionally, until the chili has thickened.
Step 8
Serve over baked sweet potato with greek yogurt on top of the chili and a drizzle of pomegranate molasses
