Ingredients

1black beans can
1pinto beans can
1can red kidney beans
1 cansweetcorn
small
1red pepper
diced
2onions
finely chopped
2 Tbsptomato purée
2garlic cloves
finely chopped
1 tspgreen chillis
chopped
jalapeños
Chopped
2 tspcumin powder
1 tspblack pepper powder
1 tspchilli powder
½ tspdried oregano
salt
to taste
1vegetable stock cube
dissolved in 400 ml hot water
2 Tbsplemon juice
fresh coriander
for garnish
2 Tbspolive oil
Instructions
Step 1
Heat oil in a deep pan on a medium-high heat and add chopped garlic. Sauté for a few seconds.
Step 2
Now add onions and mix well until they’re translucent. Then add red peppers and jalapeños and mix well.
Step 3
Now add the tomato purée and spices - green chillis, cumin powder, black pepper powder, oregano, chilli powder and salt and give it a good stir.
Step 4
Then add all the beans and mix well. Add the vegetable stock, cover and cook on a medium heat for 5 minutes. Mash some of the beans with a potato masher to make a thick gravy.
Step 5
Add lemon juice and sprinkle of fresh coriander.
