This is a healthier, more flavorful version of KFC’s chicken bowl. My kids loved it! I used a seasoning blend by Arkassippi Combo Products called Garlic Butter Bomb, but spice the potatoes any way you want!

Step 1
Preheat oven to 400.
Line a baking sheet with aluminum foil and spray with non stick cooking spray (I use coconut oil). Wash and cut baby potatoes into fourths. Coat in a thin layer of avocado oil and seasoning of your choice, or salt and pepper to taste. Spread out on baking sheet and cook in oven 15 minutes. Add chicken bites to potatoes and return to oven for 5 minutes. Flip chicken bites and cook an additional 10 minutes. Just before chicken and potatoes are done, cook corn according to package directions (steamable bags are best). Season as desired. In a bowl, layer potatoes and then corn. Sprinkle with cheese and place chicken on top.
