One-dish Risoni with Tomato & Basil

Instructions

Step 1
Dice bacon and place in a frying pan on medium high heat and cook until it crisps up. Remove bacon from pan and place in a bowl lined with paper towel.
Step 2
While the bacon is cooking. Halve the Cherry tomatoes. Remove basil leaves from the stems and finely chop. Finely chop Garlic, and Onion. Cut lime into wedges

Step 3
Place frying pan back on medium high heat and cook tomato halves until browned. 3-5 minutes. Remove tomatoes from frying pan and place on plate.
Step 4
Put frying pan back on medium high heat and cook the onion until it starts to soften. Then add the garlic and cook for 1 minute. Add stock, tomato paste, tinned tomatoes, and risoni. Bring to the boil, reduce heat to low, cover, and simmer for 10 minutes, stirring occasionally.

Add the cooked tomatoes, peas, and bacon. Cook for another 7 minutes.

Add spinach leaves and stir until leaves wilt. Remove from heat.

Serve into 4 bowls, topping with ricotta, basil, and a wedge of lime.
