Instructions

Step 1
Adjust rack to lower-middle position in oven and heat to 500 degrees. Cut two 9-inch square pieces of parchment paper. Combine broccoli, feta, mozzarella, ricotta, parmesan, oil, egg yolk, garlic, and spices in a bowl.

Place dough on a lightly floured counter, divide in half, and covered with greased plastic wrap. Flatten the dough into a 9-inch round, working one piece at a time. Transfer each piece to a parchment square.

Spread half of the broccoli mixture evenly over half of each dough round, leaving a 1-inch border. Brush egg with egg wash. Fold the other half over filling, leaving 1/2 inch border uncovered. Press the edges of the dough and crimp to seal.

Use a sharp knife cut 5 steam vents, about 1.5 inches long. Brush tops with remaining egg wash. Transfer calzones onto a baking sheet. Bake until golden brown, 15 minutes, rotating the sheet halfway through. Transfer to a wire rack and let cool for 5 minutes before serving.
