BEST EVER lettuce wraps
These lettuce wraps were my BEST EVER sauce. You could make the sauce for any stir-fry (I know I will be!). If you don’t like tofu chicken would be a good alternative. Use whatever garnishes you like, cilantro & green onions would be great if you have them! If you have time, freezing tofu then thawing will create best texture.

If possible, freeze and thaw the tofu for best texture. Press water out of tofu. Cube or tear up. Coat with cornstarch then with 2 eggs. Pan fry in neutral oil. Preheat oven to 350°F, spray a casserole dish with nonstick spray. Mix together sugar, vinegar, soy sauce, honey, sesame oil, ginger and garlic. Pour over tofu. Bake, stirring every 10 minutes until sauce thickens, approx 40 minutes. Wash lettuce leaves. Grate carrots. Mix in a few tbsp mayo, splash of sesame oil and squeeze of sriracha to make a slaw. Salt to taste. Top lettuce leaves with tofu, carrot slaw, chopped green onions and cilantro (optional). Wrap and eat!
