Heat oven to 350 degrees

Set out ~4 medium frozen brown bananas to thaw and 2 eggs to room temp (~30 min), and melt 105 g butter in the microwave and set out to cool

Once thawed, In a ~1.5 qt sized bowl, break up 435 g of banana with a fork then whisk banana until minimal chunks

Add 130 g sour cream to the bananas and whisk until just combined and set aside, don't overmix

In an ~2 qt sized bowl, whisk to combine 298 g bread flour, 1.5 tsp baking soda, 1 tsp cinnamon, 1/2 tsp salt, and 4 dashes nutmeg

In a separate ~2 qt sized bowl, whisk 210 g sugar and 105 g butter until smooth, then whisk in 2 tsp vanilla, then whisk in 1 egg, then the 2nd egg until combined, airy, and slighly bubbly

With a spatula, fold the flour mixture into the sugar mixture until almost combined, don't overmix, batter should still have flour pockets

With a spatula, mix in the banana mixture until combined, don't overmix

For loaf:
7) Line 8.5x4.5 loaf pan with parchment paper or spray with baking spray
8) Pour batter into the pan and bake for ~60-70 min on second lowest rack, checking as early as 50 min based on oven performance. Turn pan halfway through. Toothpick should come out clean when checking
9) Transfer loaf from pan to cooling rack immediately, place a towel on top of loaf and flip pan upside down to get out. Allow to cool completely before slicing loaf (~2 hrs)

For muffins (yields ~12):
7) In jumbo silicone muffin pan, place jumbo foil with paper liners in pan
8) Spoon batter in muffin cups nearly full and bake for ~30 min. Turn halfway through. Toothpick should come out clean when checking
9) Transfer muffins from pan to cooling rack immediately, place a towel on top of pan and flip pan upside down to get out. Allow to cool completely before eating (~1 hrs)
