Ingredients
2 servings
3leeks
finely sliced with the green tops removed
2carrots
medium sized, finely chopped
4 clovesgarlic
minced
1 teaspoonpaprika
¼ teaspooncumin
1 tablespoonnutritional yeast
1 cupcoconut milk
½ cupvegetable broth
0.5juice from lemon
⅓ cupharissa
2 tablespoonstomato paste
1 cupparsley
finely chopped
1can chickpeas
drained
1salt
to taste, I used about /2 teaspoon of salt
pepper
Instructions
Step 1
Add a splash of oil to a skillet over medium heat along with the carrots and leeks. Cook for 5 minutes.
Step 2
Add garlic to the skillet and cook for 5 more minutes.
Step 3
Add all other remaining ingredients to the skillet and stir to combine. Bring to a simmer and cook for 10-15 more minutes.
Step 4
Divide out mixture and serve with toasted sourdough or your favorite grain. This also tastes great topped with feta.
