Instructions

Step 1
Add a splash of oil to a skillet over medium heat, along with the carrots and leeks. Cook for 5 mins.
Step 2
Add garlic and cook for 5 more mins
Step 3
Add all remaining ingredients and stir to combine. Bring to a simmer and cook for 10-15 more mins.
Step 4
Serve with toasted bread or your favourite grain. Also tastes great topped with feta.
