Step 1
Peel potato and use a melon baller to scoop out as many balls as you can get, dropping them into a bowl of cold water.

[Note: Use the remaining potato carcass for another recipe (we always grate it and make hash browns), or you can add it to this one. Place it in the same bowl of water to keep it fresh until needed.]
Step 3
In a medium skillet over medium heat, bring 1tbsp olive oil and a pat of butter up to temp. Add potatoes and sauté for 1 minute and cover for another ten minutes, shuffling occasionally but keeping lid on. Remove potatoes from pan and set aside.
Step 4
In same skillet over medium heat, bring fresh olive oil up to temp and add garlic and shallots. Sauté until shallots start to caramelize, 3-4 minutes. Add potatoes, rosemary, bacon, salt and pepper. Cook for another minute to get all the ingredients extra-friendly with each other.
Step 5
Plate and serve immediately.
Step 6
Works well as a snack or a breakfast side.
