Step 1
Heat fat in a 10-12 inch skillet and saute garlic and scallions for 2-3 minutes.
Step 2
Add mushrooms and cook 5 minutes longer until tender.
Step 3
Add everything but the cheese and cook for 3-5 minutes until most of the moisture is absorbed.
Step 4
Remove from heat, sprinkle with cheese, and serve.
