Instructions

Step 1
Process cheddar, brie, and wine until smooth paste forms, 20-30 seconds. Add shallot and pulse to combine, 3-5 pulses; transfer to a bowl. In a separate bowl, combine mustard and butter.

Step 2
Brush the butter-mustard mixture evenly on one side of each slice of bread. Flip four pieces over and spread the cheese mixture evenly over the second side. Top with remaining slices and gently press down.

Heat a non-stick skillet over med heat for two minutes. Place two sandwiches in a skillet, reduce heat to med-low, and cook until both sides are evenly crisp and golden brown, 6-9 minutes per side.

Repeat for the remaining two sandwiches.
