Instructions

Step 1
1. Remove the ends of the calabacitas and slice in half. Remove the inside and put to the side.
Step 2
2. Boil water and add 1 tbsp of salt. Add in hollowed calabacitas and cook for 5 minutes. Remove immediately.

3. Roast tomatoes, 1/2 white onion, 2 garlic cloves, jalapeño, and serrano pepper using your preferred method. (Air fry at 390° F for 10 minutes)

4. Add roasted vegetables to a blender with 1/2 c water, cilantro, and seasoning to taste (low sodium chicken bouillon) and put to the side.
Step 5
5. Finely dice 2 cups of the inside of the calabacitas as well as the other vegetables - 1/2 white onion, 1/2 bell pepper, and 2 oz mushroom.
Step 6
6. To a greased pan, brown the ground beef for 3-4 minutes.
Step 7
7. Add the onion and bell pepper. Cook for 3 minutes.
Step 8
8. Add the mushrooms and zucchini and cook for 4-5 minutes or until all vegetables are cooked through.
Step 9
9. Stuff the calabacitas with about ~1.25 oz of beef mixture.
Step 10
10. Add salsa to a greased pan and simmer for 5 minutes.
Step 11
11. Add stuffed calabacitas and add 14 G of fat free cheese to each.
Step 12
12. ONE SERVING: 4 calabacitas rellenas and about 1/2 c salsa.
