Instructions
Step 1
In a bowl, crumble feta with your hands, add cream cheese and chopped mint and fresh spinach. Mix everything together.

Step 2
In a bowl, mix flour with Greek yoghurt for a couple of mins or until your form a dough.

Cut your dough into 4 pieces then flatten each piece to form a disk.

Add one tablespoon of the feta filling at the centre of your dough disk then bring in all the corners of the dough into the centre and seal your flatbread.
Step 5
Cook your feta flatbreads in a pan over medium high heat for about 4-5 mins each side.

Step 6
For the rocket pesto, in a blender mix rocket with parsley, a pinch of salt and a generous drizzle of extra virgin olive oil until smooth.
