Step 1
Preheat pan over medium to medium high heat
Step 2
Shred carrots, squeeze out most of the juice with a paper towel/cheese cloth/etc
Step 3
In a bowl combine all ingredients.
Step 4
Add oil to pan and wait for it to be hot but not smoking
Step 5
Roll meatballs (we like ours approximate 1oz size)
Step 6
Add to pan. Cook on all sides. This takes about 3-5 minutes depending on your desired level of crunch (we like ours crisp outside).
