Sun-dried Tomato Pesto:
1 CupSun-Dried Tomatoes
0.5 CupFresh Basil
0.25 CupPine Nuts
0.25 CupWalnuts
0.25 CupNutritional Yeast
¼ cupolive oil
2 ClovesGarlic
0.5juice of lemon
salt
pepper

Instructions
Step 1
Cook pasta according to package instructions until al dente.
Step 2
Meanwhile, place all sun-dried tomato pesto ingredients into a food processor and process until desired consistency. I prefer mine with a little bit of chunk.
Step 3
Drain the pasta and mix in the pesto whilst the pasta is still hot.
Step 4
Transfer to serving bowls and garnish with fresh basil, pine nuts and hemp seeds. Enjoy! Store leftovers in the fridge for 4-5 days.
