Pink Butter Beans & Beetroot Pasta

We all love a pink beetroot pasta, but have you tried adding butter beans? They’re an easy and budget-friendly way to add a whole lot of creaminess and plant protein to this pasta sauce.

Instructions
Step 1
Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water.
Step 2
Place butter beans, garlic, beetroot, tahini, nutritional yeast, balsamic vinegar, pasta water, salt and pepper into a food processor and process until smooth.
Step 3
Pour the sauce into a pan over medium heat. Add the pasta, mix well and cook until hot.
Step 4
Remove from heat and serve. Optionally garnish with extra tahini and fresh herbs. Enjoy!
