Instructions

Step 1
Heat oven to 400 degrees F (205 C).
Step 2
In a small bowl mix together avocado oil, lemon juice, dill, and salt.
Step 3
On a rimmed baking sheet spread vegetables and salmon in a single layer. (Option to cover pan in a sheet of parchment paper to avoid sticking).
Step 4
Coat vegetables and salmon with avocado oil mixture.
Step 5
Bake for 20 - 25 minutes or until vegetables are soft on the inside and crispy on the outside. If salmon is cooked through and no longer dark pink on the outside before vegetables are cooked, remove salmon and allow vegetables to cook for longer.
