Easy Hearty Lentils

We could all use some more fiber and nutrition in our diets, and lentils are an easy great way! This dish is such an easy one pot meal that I guarantee will become one of your weekly rotated meals as well as keep you and your loved ones healthy.

Instructions

Step 1
1. In a large pot, heat the cooking oil over medium heat.

2. Add the diced onion and sauté until translucent and beginning to caramelize.

3. Stir in the crushed garlic, cubed potatoes, diced carrots, sliced celery, spices (cumin, turmeric, ginger, ras el hanout), and tomato paste. Mix well to coat the vegetables with the spices.

4. Add the soaked brown lentils and the 1/2 cup of stock. Stir to combine.
Step 5
5. Pour in 5-6 cups of stock of choice, enough to cover the lentils and vegetables.
Step 6
6. Bring the mixture to a boil, then reduce the heat to medium-low, cover the pot, and simmer for about 20 minutes, or until the lentils are soft and most of the liquid is absorbed. Stir occasionally.
Step 7
7. Season with salt, pepper, and cayenne pepper (if desired) to taste.
Step 8
8. Serve the lentil stew with your choice of fresh bread. Garnish with lemon juice and hot harissa if you like a little something extra ;)
